Chocolate Covered Cherry Stout BBQ Sauce by Jim Neff

"The key is using a good dark beer."

Ingredients to make about 2/3 of a quart:


½ cup Michigan Maple Syrup.

¾ cup apple cider vinegar. 

11/2 cup brown sugar.

1 tsp salt.

½ tsp black pepper. 

½ tsp hot chili powder. 

1 cup (8 oz) tomato paste.

1 cup Chocolate Covered Cherry Stout.


Mix the ingredients in a saucepan and bring to a boil. Then back off to the lowest heat possible and let simmer for 40 minutes. Cool. Put in Mason jar.


Notes: Tomato paste comes in a 6 oz. can, so add ketchup to make up the other 2 oz. One cup of beer leaves some in the can, so take one for the team and drink the rest. If you double the recipe, you can use the entire pint of beer. The cool thing is that anyone can make this because it requires no exotic ingredients.
